5 green tea bags or several heaping teaspoons of green tea leaves

A catechin is effective because it sticks to proteins easily and blocks bacteria from adhering to cell walls. This disrupts their ability to destroy them. The catechin in green tea also prevents viruses from adhering to cell walls and causing harm.

**Definition of Tannin:
All tannins act as astringents, shrinking tissues and contracting structural proteins in the skin and mucus.

Why Green Tea Has More Antioxidants Than Black Tea

Processing green tea differs from the way black tea is processed. Antioxidants in the tea leaves are nearly exhausted after black tea is processed whereas in green tea, almost all of its antioxidants are left in the leaves after processing.

Antioxidants in an apple

Antioxidants are active when an apple is sliced. You must have noticed that after slicing an apple, its flesh slowly turns into brown. That is because the apple's flesh is reacting to oxygen when it is exposed to air. This reaction produces free radicals and could create a chain reaction.

All fruits have antioxidants. Different types of fruits have different types of antioxidants. This is nature's defense for the fruit from oxidizing.

Let's get back to the apple. When free radicals are formed in the exposed flesh, the antioxidants in the apple quenches these free radicals to prevent a chain reaction. All of the exposed area of the flesh reacts to oxygen and therefore all these areas forms free radicals which are then quenched by the apple's antioxidants. Chain reaction cannot continue to the inside flesh as antioxidants quench these free radicals.

The discoloration you see in the exposed flesh are the result of molecules which reacted to oxygen. Scrape off that layer and you will see what the antioxidants in the apple has accomplished. It stopped the oxidation from going further inside the flesh.

Black Tea Processing

The following are the basic processing of black tea.

1. Harvesting
2. Withering - the leaves are spread and left to dry.
3. Rolling - the leaves are twisted and rolled either by hand or machinery. This process breaks or cracks the surface of the leaves exposing it to oxygen.
4. Oxidation or fermentation - the leaves are left to dry for several hours until it is about 80% dry.
5. Drying - the leaves further dried by applying heat without burning the leaves. This stops the oxidation process.

Just like the apple when the membranes of the leaves cracked in the rolling process, it exposed the insides of the leaves to oxygen. The free radicals produced are quenched by the antioxidants inside the tea leaves. Therefore those antioxidants that quenched the free radicals are already spent and will not be available in the finished product.

Green Tea Processing

This process differs a little bit from the way black tea is processed.

3. Drying

As you can see, the steps that can oxidize the leaves, rolling and oxidation, are omitted leaving the antioxidant content of the leaves almost intact.

This exposes the juice of the leaves to the air whereby the oxidation process continues after which the leaves are laid out to dry for a second time. This process will oxidize the leaves from 20-80%, depending on the type of final product desired. The leaves will then be fired to halt the oxidation. Then they are sometimes rolled while still freshly roasted and fired several more times. As a way of finishing the process the leaves are completely cooled and then fired a final time to give the oolong tea the special flavor while reserving the healthful properties of the leaves.

Tea of all types have been under the microscope of late, and oolong tea has been studied and found to have numerous antioxidants, vitamins and minerals along with polyphenols, which all fit into a healthful regiment. Polyphenols that are found in oolong tea have the ability to remove free radicals, which are known for prematurely aging the skin along with causing the dark spots associated with aging. Free radicals have also been associated with hindering the immune system and they are also associated with cancer cells as well as muscle tissue deterioration or damage.

There are many teas that have been drunk throughout the ages. They are basically infusions of plants, usually the leaves and sometimes the flowers, by boiling them with water. Teas can be drunk hot or cold and are used for a variety of ailments. Teas of different sorts are drunk worldwide.

The official tea that we drink is the second most popular beverage and grown in the mountainous regions of China, India, Sir Lanka, Vietnam, Nepal, Georgia, Japan, Kenya, Malawi and Taiwan. The tea we drink is taken from the top leaves and the buds of the Camellia Sinensis tree. These leaves are specially dried and then crushed for maximum flavor.

Tea is a mild stimulant, with small amounts of caffeine. It has far less than its counterpart coffee. It also has small amounts of vitamin A, B2, C, D, K, and P. there are also trace amounts of some minerals. Overall it is good for your health. It is recommended that about 3 cups of tea and more should be drunk a day to get the healthful qualities of this beverage.

Black tea is the most common form of tea and is known as the famous "English tea" as this is drunk predominantly in Britain and the Western world. Green tea is also not fermented like white tea but is made from more mature leaves so is much more common and affordable. This tea was predominantly drunk in the Orient namely Japan and China, but is gaining new ground in the West as research is showing the beneficial properties of this form of tea. Again it has more antitoxins (flavonoids) and is less of a stimulant. Added to this it has vitamin C and fluoride.

In the hot days of summer it is easy to reach for a soda to help you cool off. However sodas do not really quench your thirst and there are some other healthier more refreshing alternatives. People From the Orient have long known the benefits of drinking green tea. In fact so important is this drink in these countries that there is special tea drinking rituals associated with this beverage. Japan is especially famous for this.

Green tea: Is made from the leaves of the Camellia Sinensis tree. The best green tea is grown in Japan and is harvested in the spring months. Now Australia is trying to cultivate it so that green tea can be available in other months and supply the increasing need for this beverage. Recent research is revealing that this tea is particularly beneficial for your health. It is higher in antitoxins than the traditional black tea drunk in the West. Green tea has also been found to have vitamin C and fluoride.

Green tea has more of these properties than the traditional black teas because of the way it is processed It goes through little or no processing (fermenting or oxidizing) this brings out the antioxidants and vitamins but will reduce the stimulant quality (caffeine) of this tea.

The best way to make green tea hot or cold is to make it with loose leaves. These are easily available in many grocery stores and most health food stores. When making iced tea it is good to steep the tea for about 20-30 minutes. You can just pour the hot water on it and let it cool slowly. Fast cooling will not allow the full taste to come out; so slow cooling at room temperature is best.

You can also make some good tea pops. Just fill an ice cube tray with green tea (cooled) and put toothpicks in each square and enjoy when fully frozen. You can also make regular cubes of green tea to add to beverages.

If you want to spice up your tea you can add citrus peel as it steeps. Anise and chicory are also added for a change in taste. Citrus peels are especially refreshing with iced green tea. You can also add ginger as a real thirst quencher for those hot days.

However you chose to drink your green tea it is a nice refreshing change from soda and good for your health. It will not only quench your thirst but rejuvenate you too. As our world grows smaller we are becoming more aware of different types of foods and beverages. As more research is being done on this increasingly popular drink we will see even more benefits to our health. It is recommended to drink at least 3 cups or more per day to enjoy the health giving properties of green tea.
